Ingredients
1 lb. uncooked lamb gyro meat
10-12 creamer potatoes, halved
1/2 large onion, diced
1 Tbs. dried oregano
1 tsp. salt
1/2 tsp. black pepper
2 Tbs avocado or olive oil
(optional): 4-5 mini bell peppers
Preheat oven to 425 on convection roast with a large cast iron skillet in the oven. Boil potatoes in salted water until they are fork tender. Drain. Tear gyro meat into 3" pieces and mix the rest of the ingredients in a large bowl until everything is evenly coated. Remove preheated skillet and drizzle with oil. Dump meat mixture into skillet and return to oven. Cook for 30 minutes or until potatoes are golden brown and crispy. Toss a few times throughout to help everything cook evenly. And there you have it: an easy gyro skillet

Top with feta & tzatziki.
This is also good with thinly sliced boneless chicken thigh in place of the gyro meat. Everything else stays the same.
